Taco Tuesday

I’m not sure if I’ve mentioned before but we are a big fan of Mexican food in our house. We have celebrated many of birthdays either cooking Mexican food or going to a Mexican restaurant and celebrating in the presence of a Mariachi band. We love it in all forms, and my son is really jumping on the band-wagon too. Sandwich anything between a tortilla and dip it in “sad peam” (sour cream) and he will chow down.

This week I decided to make some of our go to taco meat and feature it in both taco salads and quesadillas for a few days this week. I chose to make organic ground beef this week, but the taco seasoning I am going to share below can be used on ground turkey, chicken, shredded chicken, shrimp, anything you want to taste like a taco. I am always happy to be able to make my own seasonings and sauces at home because all of the pre-made ones in the stores are so loaded full of unknown ingredients and SALT, so much salt!

I began my taco meat this week by cooking up 1 lb. of organic ground beef and onions until the meat was cooked through and the onions were tender. Chopping up the meat along the way into small pieces suitable for tacos. While the meat and onions were cooking, I whipped up a batch of my homemade taco seasoning.

Taco Seasoning
  • 2 Tbsp. organic chili powder
  • 2 tsp. organic paprika
  • 1/4 tsp. organic red pepper flakes
  • 1/4 tsp. sea salt
  • 1/2 tsp. ground black pepper
  • 2 tsp. organic garlic granules (powder)
  • 1 tsp. organic onion powder
  • 1 tsp. organic oregano
  • 2 tsp. organic cumin

Mix all ingredients in a bowl and store in an empty spice container for future use!
*NOTE: You can add more red pepper flakes if you want a spicier taco. This amount still allows my toddler to eat it without it having too much heat.

After the meat and the onions were finished cooking, I added about 1/4-1/2 cup water and 1-2 Tbsp. of the seasoning mixture to your ground beef. Mix it all together and let simmer for a few minutes on very low heat to create sauce.

 

For Taco Tuesday, we made salads. I began by layering chopped up organic romaine lettuce topped with the warm ground beef taco meat. I topped that with Horizon Organic Mexican cheese blend, Horizon organic sour cream, chunks of organic tomatoes, Late July Quinoa and Chia tortilla chips crunched up, and Aldi organic mild salsa (hot for my husband).It was delicious, so much so that we might have it another night too, I told you we can’t get enough.
