Strawberry Cream Bars — “I need them for TOMORROW”

I love when I get glimpses into my future, glimpses of the conversations that I know I will have with my children, it’s just a matter of time before this conversation is going to happen:

“Mommy, it’s due tomorrow. We have to go buy poster board and make the project tonight. They just told us about it TODAY!”

Today said conversation was had with my husband, and by NO MEANS was he demanding or insistent on me making this happen (which is how the conversations with my children might go down the road). He did say, “We’re having a BBQ picnic at work tomorrow and there are sign-ups in the break room to bring side dishes.” He told me I did not need to make anything, but I am not that wife/mom. I am a maker and a doer of all things tasty treats, and I love my husband so much, that I would never send him to work without a tasty treat to share with his friends!!!

The other part of this story is that I DID NOT MAKE A MEAL PLAN THIS WEEK! That means each day has been a fun game of “What will we eat for dinner,” and that fun game has sent me to the grocery store every single day this week, both to Harris Teeter and Publix. I promised myself after Frank my cashier at Publix yesterday said to me, “I told you I would see you a few more times this week,” that I was NOT going back to the store! I was committed to using items I already had in my house.

This my friends, is where the Horizon Sour Cream and Lucky Leaf Strawberry Pie Filling come in. When searching “strawberry pie filling” on Pinterest, I came up with lots of pins on how to make my own strawberry pie filling (saved a few of those for another time, that’s not in the books for today), but also came up with this pin for Strawberry Cream Bars, WINNER! I had all the ingredients and they sounded delicious.

Delicious "treat bar" that is perfect for summer. Super simple to make!

Instructions
  1. Preheat the oven to 375°F. Line a 8x8 or 7x11 baking pan with parchment paper.
  2. Add flour, brown sugar, baking soda, baking powder, and salt to a medium bowl and whisk until combined. Add butter and combine until mixture is the size of peas and is crumbly. Reserve 3/4 cup of the crumb mixture and set aside to use for the topping. Press the remaining crumb mixture into the prepared baking pan. Set aside and prepare filling.
  3. Add the sour cream, sugar, 1 tablespoon flour, egg, and vanilla to a large bowl and mix until all the ingredients are evenly combined. Spread filling over prepared crust. Drop tablespoons of strawberry pie filling evenly over sour cream filling. Gently swirl the pie filling with the sour cream with a fork. Sprinkle the reserved crumb mixture evenly over the top.
  4. Bake in preheated oven for 25-30 minutes or until the top of the bars begins to brown and the center of the bars is "set." Cool completely before cutting, and serve. Store any leftovers in the refrigerator.

**NOTE:  I noticed on one of my many trips to the grocery store that my Publix recently started carrying Lucky Leaf ORGANIC pie filling! I have seen Apple, Blueberry, and Cherry and think the above recipe would be delicious with any of them. Check your grocery store next time and see if they too are carrying this exciting new product.
