Bakery Style Blueberry Muffins

For me, blueberry muffins USED to be like chocolate chip cookies. Every time I would make them, they tasted okay and looked rather unexciting. I never bit into one of my homemade creations and said, this is just like the muffin or cookie I would get in a bakery.

Until TODAY! As in these muffins are so good, I might hide them and say they “accidentally fell on the floor” so I don’t have to share with others. I will let me sweet little child have one for snack this afternoon though because after all, he did help me make them. But the others, vanished.

The muffins are light, airy, full of plump blueberries, and have the tastiest crunchy streusel topping. They are bakery blueberry muffins and they are getting written in my special recipe book. The one that is reserved only for my tried and true tested recipes that I will make forever and want to pass down to my kids.

Before I share with you the recipe, let me tell you a little about our week this week. First of all, we don’t watch a lot of television in our house, we got rid of our cable subscription because that was about $120 a month that we were literally throwing away. But what we do watch probably once a day and is typically on in the background while we are playing or as a treat while my son has his milk in the afternoon are Disney movies.

Of course we watch a fair share of new movies like Cars and Moana, but our favorites of lately were Mary Poppins and Bambi. Mary was a significant part of our life for about the whole month of April and part of May until my son broke things off with her on our trip to the beach. We mostly listened to the soundtrack about 30 times a day, but we would watch the movie too. Super recently, my son doesn’t even live in our house anymore, we have this little “Bambi” that runs around instead. Since the movie was released from the vault on the 6th (we got it on the 5th because we preordered through Disney Movie Club) that’s all we want to watch when we are granted screen time.

I mean EVERYTHING is Bambi, so needless to say today. I had Bambi in the kitchen with me helping to make Blueberry Muffins and Honey White Bread. He was such a big helper.

On to the important part, the recipes:

The first recipe is for Honey White Bread, I have included a picture from my bread machine cook book below. My problem with making bread in my bread machine is I make new loaves, and forget to write down whether I liked them or not. I have decided, thanks to my husbands suggestion, to put a “grade” on the recipe of how much we liked or didn’t like it. This was one of our favorite white breads, which is why it is making its way to the blog.

Instructions
Make Crumb Topping
  1. Mix together sugar, flour, butter, and cinnamon in a small bowl with a fork.
Make Muffins
  1. Preheat over to 400°F. Grease 8 muffin cups or line with paper liners.
  2. Whisk together flour, sugar, salt, and baking powder. Pour oil into a 2- cup measuring cup, then stir in the egg and milk. Stir milk mixture into flour mixture, then fold in the blueberries. Batter will be think so be very gentle.
  3. Fill muffin cups right to top and sprinkle with crumb topping mixture. I used almost all of it, but sprinkle the crumb topping to your liking. Bake until centers are set and tops are golden brown, 20 to 25 minutes.
